Hi, can someone please explain at a high level what I am supposed to do to get a book working in an existing project/scene? I dragged the book to the scene and created pages but now how does the player get in to book viewing mode per-se?

Check out the examples included with the plugin. You can see several methods to open the book to the middle, which is where the pages are shown. The first demo is pretty simple, so it should be straight-forward to adapt to your needs. Here is a video tutorial on how to set up your book and use it in a scene: Tutorial

The video is very good but I am just trying to wrap my head around how to handle the camera. Keep in mind I am new at unity. I have an existing project that has the camera focused on the player 3PS/FPS for example. I am trying to figure out what I need to do to either move the existing camera or if I need to add another camera and somehow switch to it, what is the normal/best practice and is there any guidance on how that is done (might not be endless specific)?

That really depends on the style of your game, there really isn't a best practice, just different ways of creating your project. You are correct that this is outside the scope of EndlessBook. You might find some ideas on how to do the camera switching / transitioning from others that have similar projects. I would go to answers.unity3d.com and ask for some ideas on how to transition your 3rd person camera to focus on a book or other object. Also check out Little Owl Gaming Youtube Channel. They are working on a game called Dungeons Diced that uses EndlessBook. Might give you some ideas and he might be willing to provide some insight into his camera work.
