Is there a way to specify the blob datatype when creating a class-based database? Or would I have to create the database via query in order to use blobs? I've looked through the documentation and done a few tests in my project, but haven't seen a way to do this. I'm trying to save large arrays and blobs seemed like the best approach. Thanks in advance!

There sure is. The Blob type is just a byte array, so if you define your class property as byte[], that will translate to Blob in sqlite. Something like:
public class TestBlobTable { [PrimaryKey] public int UID { get; set; }
public byte[] BlobField { get; set; } }
dbManager.CreateTable<TestBlobTable>();
