Recycling cells with grid simulation causes friezes on mobile devices. There are 4 small sprites and a line of text in the cell, but even completely disabling all internal ones in the prefab does not change the situation. P.S. this happens even in demo GridSimulation project

I'm not sure. There are hundreds of Unity build settings. You might reach out to the Unity team to determine the best options to get the optimal performance. I just use the defaults and they seem to work fine.
Try creating a new project and build the #10 demo scene without any changes. You might find some setting in your project that is affecting the performance.

I noticed one very strange pattern: if you disconnect the device from the PC or close Unity on it and restart the application, then the scrolling will stop freezing. Why might this be happening?

Sounds like your diagnostic monitoring of the program is causing the freezes. There is a lot of overhead for Unity to monitor all the processes and resource usage of your app in real time. The diagnostics give you useful information for debugging, but I wouldn't use that as a benchmark for how well the app will perform.
